Looking for nutritious meal ideas for cancer survivors

As an RD specializing in nutrition for cancer survivors, I often recommend meals that are high in protein and packed with vitamins. A simple recipe I like to share is a quinoa and black bean bowl.

Ingredients: 1 cup cooked quinoa, 1/2 cup canned black beans (rinsed), 1/2 avocado, 1/4 cup diced bell pepper, 1/4 cup corn, lime juice, and cilantro to taste.

Steps: Combine the quinoa and black beans in a bowl, then top with avocado, bell pepper, and corn. Drizzle lime juice and sprinkle cilantro before serving. This dish offers a balance of protein, healthy fats, and fiber, supporting recovery and overall health. I find that many clients appreciate its versatility too.
