Nigerian dishes and macros for a lifter: how do I balance it?

I've been diving deep into calisthenics for the past three years, and my gains are fire! But I'm struggling to hit my macros with my Nigerian meals. You know how rich and hearty they can be, like jollof rice and egusi. I wanna stay on point with my protein and overall splits while still enjoying my culture's food. Any tips on how to balance those macros while enjoying Nigerian dishes? Or should I just be meal prepping and tracking like crazy?
