I've been on a mission to recreate some of my favorite Chinese takeout dishes but with a high-protein twist. I love the flavors, but the takeout versions usually leave me feeling heavy and sluggish. Plus, I want to keep my nutrition on point!
Last week, I tried making a high-protein Kung Pao chicken that turned out fantastic. Here's the recipe if you want to give it a go:
Ingredients:
- 1 lb chicken breast (diced)
- 2 tbsp peanut butter
- 1/4 cup low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 bell pepper (diced)
- 1 cup broccoli florets
- 1/2 cup unsalted peanuts
- 1 tbsp sesame oil
- 2 cloves garlic (minced)
- 1 tsp ginger (minced)
Steps:
- In a bowl, mix the soy sauce, peanut butter, rice vinegar, garlic, and ginger to create the sauce.
- Heat sesame oil in a pan over medium heat, add the chicken, and cook until browned.
- Add bell pepper and broccoli, stir-frying for about 5 minutes.
- Pour the sauce over the chicken and veggies, tossing everything to coat well.
- Add peanuts just before serving.
