Any high protein vegetarian recipes? Eggs okay, but need those gains!
I've been crushing triathlons for about five years now, and while I love my plant-based diet, sometimes I just need more protein in my life. I've been scouring the internet for high-protein vegetarian recipes that aren't strictly vegan (so eggs are fair game).
I usually go for meals that are budget-friendly and quick to whip up after a workout. Things like veggie omelets, high-protein pancakes, or maybe a chickpea salad with a twist. I want to keep my macros in check, aiming for around 25-30 grams of protein per meal.
If anyone has solid go-to recipes, I'm all ears! I'm tired of my usual routine and could use some fresh ideas to stay fueled for those long rides and runs. What are your favorites? Anything that packs a punch on protein would be amazing.
