Anyone got a budget breakfast under $2 with 30g protein?

TL;DR: Whipped up a breakfast with 36g protein for under $2: egg whites + cottage cheese. Easy and kid-approved!

So, I've been on this fitness journey for a bit now, trying to hit those protein goals while juggling two kids and a budget tighter than my jeans after the holidays. This morning, I went full-on dad mode and whipped up a breakfast that I thought would cost me a fortune, but it turned out to be a steal!

Ingredients:

  • 4 large egg whites (about 100 kcal, 24g protein)
  • 1/2 cup low-fat cottage cheese (about 90 kcal, 12g protein)
  • A sprinkle of salt and pepper for flavor
  • Optional: hot sauce if you like it spicy (bonus points for waking up the taste buds!)

Instructions:

  1. In a bowl, whisk the egg whites and mix in the cottage cheese.
  2. Pour it into a non-stick skillet over medium heat.
  3. Cook until it's set, stirring occasionally, about 5 minutes.
  4. Season it with salt, pepper, and hot sauce if you're feeling adventurous.

In total, you're looking at around 190 calories and 36g of protein, all for under $2! This breakfast is so easy that even my kids can help out (and they love mixing stuff). I do a similar thing with eggs, but I throw in some ground turkey for extra protein. I mean, you could mix up the eggs and cottage cheese, but turkey takes it to a whole new level. Plus, I meal prep it for the week, so I'm set in the morning. Just an idea, man.

Lowkey, though, who really tracks protein like that? I just hit my macros and hope for the best. Also, my eggs sometimes end up burnt, so I might stick to the cereal life 馃槀. But fr, this recipe is clutch.

For real, breakfast is the most important meal, and u can totally get creative! I do a quick overnight oats with protein powder and peanut butter, it's like a dessert in the morning!
