Looking for salmon recipes that aren't teriyaki, any ideas?
I recently finished my first marathon, and I've been focused on keeping my protein intake high for recovery. Salmon is a go-to for me, but I feel like I keep making the same teriyaki dish over and over. I need some variety in my post-workout meals! Here's a recipe I came up with that's high-protein and super easy to whip up:
Lemon Garlic Salmon
Ingredients:
- 4 salmon fillets (about 6 oz each)
- 4 cloves garlic, minced
- 2 lemons (juice and zest)
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
Steps:
- Preheat your oven to 400°F (200°C).
- In a small bowl, combine the minced garlic, lemon juice, lemon zest, olive oil, salt, and pepper.
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Brush the lemon garlic mixture generously over the fillets.
- Bake for about 12-15 minutes or until the salmon flakes easily with a fork.
- Garnish with fresh parsley if desired.
This meal comes in at around 350 kcal per serving and has approximately 40g of protein! It's packed with flavor and takes less than 30 minutes to make.
