**TL;DR:** Looking for high-protein vegetarian recipes with eggs that are budget-friendly and quick to make!

I've been crushing triathlons for about five years now, and while I love my plant-based diet, sometimes I just need more protein in my life. I've been scouring the internet for high-protein vegetarian recipes that aren't strictly vegan (so eggs are fair game).

I usually go for meals that are budget-friendly and quick to whip up after a workout. Things like veggie omelets, high-protein pancakes, or maybe a chickpea salad with a twist. I want to keep my macros in check, aiming for around 25-30 grams of protein per meal.

If anyone has solid go-to recipes, I'm all ears! I'm tired of my usual routine and could use some fresh ideas to stay fueled for those long rides and runs. What are your favorites? Anything that packs a punch on protein would be amazing.

If you ever feel stuck in a rut, consider switching up your grains too. Buckwheat or farro can bring variety to your meals. They have a decent amount of protein and taste great in salads or grain bowls.

Check out lentils too! They're super high in protein and can be made into a delicious curry. Serve with some brown rice and you'll be set. It's a solid meal after your triathlon training.

Yo, if you're looking for a high-protein vegetarian recipe, you gotta try my chickpea omelet. Just blend up chickpeas with some spices and veggies, cook it like a pancake, and boom! You can easily hit that 25g protein mark. Plus, I usually whip this up post-workout and it's quick as hell. Oh, and don't even get me started on how tasty it is with some sriracha on top. If you're into pizza, add some mozzarella for those cheesy vibes, too.

Not to throw shade, but if you're relying just on eggs and beans, you might hit a wall with your protein. Mixing in some protein powder might help boost your numbers. Just saying, don't sleep on it.

I totally get it! As a busy mom, I whip up a veggie frittata with whatever I have on hand. Just beat some eggs, add in veggies like bell peppers and spinach, then bake it. It's great for meal prep, and the kids love it too. You can pack in protein by throwing in some cottage cheese!

If you're down for bulk meals, try a black bean and quinoa bowl. Seriously, it's the bomb! Cook some quinoa, mix in black beans, corn, diced peppers, and toss in a fried egg on top. It's budget-friendly and loaded with protein. You'll be feeling those gains in no time.

I wouldn't say that's totally necessary. Some people get plenty of protein from whole foods without supplements. It's all about what works for your body! I personally focus on listening to my hunger cues and eat when I'm hungry.

^^^ for real. A lot of it depends on how ur body reacts. If u feel like you're hitting a plateau, then sure, maybe consider adding something else. Otherwise, just enjoy those veggie omelets!

And don't forget about the power of tofu! Stir-fried with veggies or grilled, it can pack a protein punch. Toss it in with some teriyaki sauce, and you've got a tasty post-workout meal.

Check out a chickpea and spinach omelet! Just mash some chickpeas, mix in spinach, and add eggs. It's super easy and packed with protein, plus you can throw in some spices for flavor. This meal keeps me fueled for those long training sessions. You could also add nutritional yeast for a cheesy taste and even more protein.

Ooo, that sounds yummy! Do you have a specific recipe for the omelet? I'm just starting to experiment with chickpeas and eggs, but I'm not sure how to combine them.

Lmao, tofu's not weird. It's kinda like a blank canvas for flavors. You can fry it, bake it, or throw it in a smoothie. Just don't overthink it!

Facts! A good way to cook quinoa is to rinse it first, then use a 1:2 ratio of quinoa to water. Bring it to a boil, then simmer until the water's absorbed. It's easy and really versatile for meals.

Tofu is super versatile! It soaks up flavors rly well. Just make sure to press it to get excess moisture out, and season it well. I was scared too, but now I love it in stir-fries and scrambles.

100% on board with the chickpea omelet, but why eggs? I mean, isn't it about maximizing plant protein? Have you checked out tofu scrambles? Just cook up some crumbled tofu with your fave spices and veggies! You can add nutritional yeast for a cheesy flavor. Seriously, those things can pack a solid protein punch too. I had one last week and it was bomb! Just saying, give it a shot if you want some variety.

What's the best way to cook quinoa? I tried once but it ended up mushy. 😅 I'd love to add it to meals for more protein!

Ngl, I've been scared to try tofu. Does it taste weird? I'm used to eggs and beans, so I'm not sure if I'd like it.

I get the protein struggle! As a fellow triathlete, I'm all about that plant-based life, but I still need my gains too. Have you tried making a lentil and quinoa salad? Packed with protein and super easy to prep. Just mix cooked lentils, quinoa, diced veggies, and toss in some lemon juice and herbs. You can easily get 30g of protein with a generous serving. Plus, it keeps well in the fridge, so meal prep is a breeze. Great for post-training fuel!
